Logistics and Security
There will be a concern for the equipment being checked out to students. This can include:

Damage. Students must be instructed in how to handle the cameras properly so they are not damaged from dropping, liquids, etc. Some kind of case for the cameras may be needed.

Security. They must also be instructed in preventing loss or theft. This can partially be solved by teaming students up with cameras. Sharing a camera with one or two other students increases their sense of responsibility for it. In addition, trusting them with school property increases their self-esteem, since you are implicitly taking a leap of faith in giving them responsibility for a potentially expensive (eg., digital) camera. This effect is an important part of the PV method, and should not be discounted.

Logistics. The cameras should be issued to pairs (or teams) of students with specifics in scheduling (who will use them and when) and deadlines for stages in the project. Numbering the cameras and entering them into a table will simplify this process.
